A recipe for a no-bake coffee, date and walnut slice

Coffee Date Walnut Slice

No one ever said that desserts needed to be hard. In fact, some of the best desserts out there require little to no work at all. This delightful treat you can make from scratch and impress your friends, but you won't even need to turn on your oven. All you'll need is a food processor and a few minutes to brew the required coffee.

 

Makes 16 pieces

Gluten free | Dairy Free | Vegan

 

Ingredients:

1 cup pitted medjool dates

3/4 cup strong coffee / decaf coffee

1 1/2 cups walnuts

1 tbsp vanilla extract

3 tbsp chia seeds

1 tbsp melted coconut oil

 

Method: 

Soak pitted medjool dates in coffee for 20 minutes. Pop all date and coffee in food processor with walnuts, vanilla, chia and melted coconut oil and blitz. Press into a lined loaf tin and set in the freezer for 2 hours. Slice and dust with cacao.

Jacqueline takes a practical, evidence based approach to delivering information and ideas and works closely with many organisations as media spokesperson and ambassador including Woolworths, Remedy Drinks and Eimele.

She has 2 kids – Jet and Elke – and outside her working hours you’ll find Jacq with her family in the surf, on the beach, or out and about in nature.
