The easy baking recipes we’re turning to when in need of comfort

It's safe to say that at this point, our weekends at home are looking quite free for the next month or so. Last years lockdown brought an onslaught of sourdough bread baking and banana bread bonanzas, and this year it's safe to say we are burnt out when it comes to crazy and intricate baking projects.

Instead, sometimes we just need ease and comfort to whisk us away, and what better way to do so with a classic and easy baking recipe? The one your mum has stashed away, scribbled onto a sheet of floury paper, shoved into a butter-splattered plastic sleeve; The one grandma makes without looking, just measuring from the heart so you couldn't get the recipe even if it wasn't a secret; The one that you can make as long as you have flour, eggs, sugar, and a few other things lying around; The one that doesn't need to proof overnight or be laminated into shards of pastry.

Easy baking, shared over cups of tea and long catch ups. That's what we're going for here, and below, you can find a round up of our favourite easy baking recipes. Many of them have the addition of fruit, which is one of the easiest, and most delicious way to jazz up a cake, but if you don't have a certain fruit, or it's not in season, you can likely switch it out with something else that has a similar water content.
