Our favourite plant-based recipes for planetary wellbeing

We’re not here to set food resolutions for you or anyone else – ourselves included. We are, however, pledging to be more mindful of what we put in our bodies, for no other reason than our planet is warming at an alarming rate and animal agriculture is a big player in contributing to climate change. A plant-based diet can be a step in the right direction to reduce our carbon footprint. For some weeknight inspiration to get you going, we’ve complied a round-up of our favourite plant-based recipes from RUSSH.com.

Undercooked eggplant has, for too long, ruined the reputation of this silky, smoky vegetable, and we won’t have it any longer. Try this nutrient-dense version with za’atar and beans and leave your office mates wishing they’d been so brave.
