Fruit gelato for the weekend

I remember the day I was first introduced to the banana ‘nice-cream’ concept, it was some kind of revelation! Now eating a treat like this is much more the norm, and as a nutritionist I want others to experience that ease and deliciousness in health too.

The base for this fruit gelato aka ‘nice-cream’ is frozen bananas which, when blended together, create a beautiful creaminess much like the real deal but without the dairy, fats, refined sugars and other processed additives.

Once you’ve created the base you can truly choose your own gelati adventure - strawberry, lime coconut, hazelnut cacao – the options are endless.

Strawberry
Serves 2

Ingredients

3 frozen bananas
1 cup frozen strawberries (or any berry will do)

Method

Place all ingredients in a blender and blitz until deliciously pink.

Lime And Coconut
Serves 1

Ingredients

3 frozen bananas
1 heaped tablespoon mint leaves
1 tablespoon flaked coconut (extra for serving, if desired)
1 teaspoon lime juice
1 teaspoon lime zest

Method

Place all ingredients in a blender and blitz until creamy.

Hazelnut Cacao
Serves 1

Ingredients

3 frozen bananas
1 tablespoon raw cacao powder
1/3 cup toasted hazelnuts

Method

Place all ingredients in a blender and blitz until rich in chocolate colour and flavour.
