A recipe for the perfect springtime Broccoli Tzatziki Salad

Broccoli Tzatziki Salad

Looking for something new to cook and enjoy? Let us tempt you with this healthy, delicious salad which is perfect for springtime. Enjoy as the perfect accompaniment to your meal or eat it all on its own.

 

Serves 4 as a side
Gluten free | Vegetarian

 

Tzatziki dressing:

3/4 cup Greek or coconut yoghurt

1/2 clove garlic, crushed

1 Lebanese cucumber, diced

2 tbsp mint leaves, finely sliced

Juice 1/2 lemon

Pinch Sea Salt + Pepper

 

Salad:

1 medium head broccoli florets, lightly steamed

1 Fuji or red Apple, slices into sticks

1/2 cup walnuts, roughly chopped

3/4 cup cooked quinoa or cracked wheat

 

Method:

Mix all ingredients for the tzatiki dressing together in a small bowl.

In a separate bowl mix broccoli with tzatziki dressing.

Layer onto a plate with the apple sticks, walnuts and quinoa or cracked wheat and serve.
