Snow pea, orange and walnut salad

Warming simplicity, fresh crunch and zesty flavours are the standouts in this dish. A beautiful way to finish the summer and welcome the autumn months ahead with seasonal ingredients on hand. Perfect to team with a steamed or grilled fish.

Warm snow pea, radish, orange and walnut salad

Ingredients

300g snow peas, trimmed
1 bunch rainbow radish, finely sliced
1 cup basil leaves, roughly torn
1/2 cup (50g) walnuts, finely chopped
1 teaspoon honey
1 tablespoon orange juice
1 teaspoon orange zest
2 ½ tbsp extra virgin olive oil
1 teaspoon lemon juice
Sea salt and black pepper

Method

Warm a large frypan on medium heat and add one tablespoon of extra virgin olive oil. Add snow peas to pan and cook for two to three minutes.

Combine honey, orange zest and juice, remaining extra virgin olive oil and lemon juice in a bowl and whisk to combine.

Place snow peas and radish in a large bowl. Pour over dressing, add basil leaves and walnuts, season with sea salt and pepper and toss. Arrange on a serving plate and enjoy.
